This is a very simple recipe to follow, which makes the weekend a lot easier and comfortable. Imagine waking up a nice tray of piping hot muffins right out of the oven. Mmmm…..
Ingredients:
- Plain flour: 100g
- Baking powder: 1 tsp
- Unsalted butter: 50g
- Orange rind: 1/2 big orange
- Caster sugar: 50g
- Egg: 1/2, beaten
- Orange juice: 1.5 tbsp
- Vanilla paste: 1/2 tsp
Method:
- Preheat oven at 200 degrees Celsius.
- Combine plain flour and baking powder.
- Rub butter into plain flour till texture becomes crumb-like.
- Mix in orange rind and caster sugar. Knead till dough forms.
- Add in egg, orange juice and vanilla paste. Combine evenly by stirring with a spoon.
- Fill small muffin cups with mixture till 3/4 filled. Place in a baking tray.
- Bake 20min till golden brown. Leave to cool 15min before serving.
Trick:

You can replace the orange rind and juice with other fruits (lemon, berries, peach) chocolate buttons and/or chocolate milk.

I don’t know why, but this recipe resonated with me when I read through it, possibly because of the interesting technique of working the butter into the flour. I never make muffins, but I wanted something cake-like but not as sweet, so I thought I’d try it. Made these today and just tasted them. Honestly, I didn’t have high expectations, because I’ve had mixed experiences making recipes from amateur chefs on this site. I am here to report that this recipe is one of the most successful and tastiest that I’ve made from Foodgawker. Kudos to you – great job! They’re delicious, and the crumb is perfect.
