Very Soft & Fluffy Cheese & Onion Bread

I love home-baked bread so much! I can eat them for my meals any time of the day. Bread is breakfast, lunch and dinner for me. That’s how delicious they are to me.

This recipe with cheese and onion makes use of fragrant fried onion slices to add to the flavour and texture of the bread, so that it does not taste like plain old Joe. I love the cheddar cheese at the top of the buns most, especially when the bread is freshly baked out of the oven. You can feel the crusty bits when you bite into the bun; it is something to die for.

Ingredients:

  • Oil: 1 tbsp
  • White onion: 1 medium, roughly chopped (around 120g)
  • Bread flour: 400g
  • Bread improver: 6g
  • Milk powder: 20g
  • Salt: 8g
  • Sugar: 40g
  • Instant dry yeast: 8g
  • Cold water: 240g
  • Unsalted butter: 40g (softened, at room temperature)
  • Parmesan cheese: 12g (grated)
  • Egg: 1, beaten (for egg glaze)
  • Cheddar cheese: 80g (grated)

Method:

  1. Add oil in pan. Fry onion till softened and slightly browned. Set aside to cool.
  2. Using a dough hook, blend together bread flour, bread improver, milk powder, salt, sugar and instant dry yeast on low speed for 1min.
  3. Add in cold water. Continue mixing on low speed for 1min. Then increase to medium speed and mix for 5min.
  4. Add in butter. Continue mixing on low speed for 7-10min till dough is formed.
  5. Add in fried onion and Parmesan cheese. Mix on low speed for 1min till evenly combined.
  6. Round up dough on floured surface. Place in airtight container and leave to rise for 1hr till doubled.
  7. Divide dough into 7 equal portions (around 40g each). Round up into smooth balls. Place inside greased baking tray with one ball in the centre and the rest around this ball. Leave to proof for 1hr.
  8. Preheat oven at 200 degrees Celsius.
  9. Brush buns with egg glaze. Sprinkle cheddar cheese on top of buns.
  10. Bake 18min till golden brown. Leave to cool on rack for 15min before serving.

Tricks:

  • Eat the buns while warm as that’s when the cheese are crispy and well-crusted, making the buns really nice to bite into!
