For all of the noodle lovers out there, this bowl of rice noodles coated in thick hoisin peanut sauce is a lovely way to get your daily dose in a different way. It’s sweeter because of the hoisin sauce, but this sauce goes especially well with the rice noodles. For slightly more kick in your noodles, you can also add some chilli paste, 老干妈 or fresh red chilli slices in your noodles to give it that additional layer of texture and spice.

Ingredients:
- Hoisin sauce: 3 tbsp
- Warm water: 3 tbsp
- Sugar: 1 tbsp
- Peanut butter: 1 tbsp
- Sesame oil: 1 tsp
- Sesame seed: 1 tsp
- Rice noodles: 400g
- Bok choy: 100g
Method:
- Combine hoisin sauce, warm water, sugar, peanut butter, sesame oil, sesame seeds in a bowl. Stir till evenly mixed.
- Cook rice noodles and quickly blanch bok choy. Drain away water.
- Transfer noodles into bowl with sauce. Coat noodles evenly with sauce.
- Top with blanched bok choy, minced meat and sunny side up to serve.
