I love guacamole. Why? You might ask? Because it’s made with avocadoes – lovely, creamy, rich avocadoes. To make a good bowl of guacamole, make sure to add in enough acidic juice and fruits such as lemon and diced tomatoes as well as enough fresh herbs like fresh parsley or coriander. This will make whatever you eat it with taste as great as heaven.
To be honest, I don’t even need the toasts and chips to serve this dish with. I can just finish one whole bowl of guacamole without needing anything else. I don’t need carbs at all. This bowl of tasty, tart and refreshing guacamole can be a good wake-me-up anytime of the day. Make sure to leave some avocados chunks as they are so that the texture in the guacamole is varied and more interesting to serve out. The acid in the lemon also helps to slow down the process of oxidation in the avocado so it can look fresher for a much longer time.
Ingredients:
- Avocado: 3, small
- Lemon: 1
- Tomato: 1, diced
- Red chilli (optional): 2, finely chopped
- Garlic: 1, finely chopped
- Shallot: 1, finely chopped
- Olive oil: 2 tbsp
- Coriander: 1 stalk, finely chopped
- Salt: 1/2 tsp
- Ground blackpepper: a pinch
- Tortilla chips (or tacos): 1 packet
Method:
- Mash avocados with a fork. You can leave small chunks unmashed if preferred.
- Squeeze lemon juice into avocado.
- Stir in tomato, red chilli, garlic, shallot, olive oil and coriander.
- Season with salt and blackpepper.
- Serve chilled with tortilla chips, taco chips or toasts.
Serving:
3 – 4 persons as side dish
