Simple To Make Club Sandwiches

The boy is having his year-end holidays, again. This marks the end of his lower primary days, and he will be going on to the upper primary levels from next year onwards. Time really flies. He can sleep by himself now, eat by himself, and do work or read by himself. Soon, he will be going out with his friends by himself, going home by himself and eating meals all by himself. I am trying to treasure all these precious times I have with him while I still can, before he becomes fully independent.

This is the second recipe that I am preparing in my anticipation of Christmas. It’s green, red and yellow, all at once. Not to forget how fresh the ingredients are – crunchy cherry tomatoes, crunchy lettuce leaves, soft and smooth hardboiled eggs. Imagine taking a bite into the sandwich and crunching down on everything in that bite. Yummy.

That saying, given my age and progressively slow metabolism, I must say I need to start steering away from eggs soon and leave that out of my diet. There’s still tuna mayonnaise, fortunately, which is why I have provided two options if you need to be as cautious as I am in your diet. Both are nice, but eggs with mayonnaise is always nicer.

Ingredients:

  • White bread: 9 slices, with browned edges removed
  • Mayonnaise: 6 tbsp
  • Egg mayonnaise: 3 hardboiled eggs, mashed together with 3 tbsp mayonnaise, salt and ground blackpepper to taste
  • Tuna mayonnaise: 100g tuna flakes (drained), combined with 3 tbsp mayonnaise, salt and ground blackpepper to taste
  • Lettuce: 6 leaves
  • Tomato: 1, thinly sliced
  • Cheddar or Monterey Jack cheese: 3 to 6 slices
  • Ham: 6 slices

Method:

  1. Toast the bread slices in the oven till slightly browned and crispy.
  2. Remove from oven and leave to cool.
  3. Spread mayonnaise on one side of all bread slices.
  4. Spread egg mayonnaise onto side of bread with mayonnaise spread.
  5. Place 1 lettuce leaf on top of egg mayonnaise, followed by tomato slice.
  6. Place 2nd slice of bread on top of tomato. Top with cheese slice (one or two), ham slice (one or more) and 1 or more lettuce leaf.
  7. Cover with third slice of bread. Slice in half into two triangles.
  8. Secure with cocktail sticks to serve.
  9. Repeat steps 4 to 8 with egg mayonnaise or tuna mayonnaise.
  10. Serve chilled.

Tricks:

  • I used cherry tomatoes here instead of red tomatoes for the same reason as my other recipes. The club sandwiches would look so much better and neater with the big red tomatoes though.
  • You can put as much egg/tuna mayonnaise, cheese and ham slices as you wish in one single sandwich. The trick is to spread more mayonnaise onto the bread slices to make the sandwich tastier and not so dry.
