Counting down to the new year in three more days’ time. I have here another very simple recipe that I saw as an idea from Pinterest, which is cute and very very cheery. It is a flower dish that’s made from eggs and cherry tomatoes and herbs. It allows anyone with some creative juices to do it but maybe some technique will still be required from an experienced adult to be able to scrape it off from the pan nicely into the serving dish without forming any damages to the nicely framed picture.
Looking back at the year 2024 and reflecting on my last blog post in 2023, I think I managed to survive the year well based on the fact that I accomplished what I have set out to do back then. The refurbishment of the house went well with very very minor hiccups. Actually the hiccups were mostly to do with the scheduling so I guess it’s bearable though it meant some changes to our work commitments (which is limited and very precious to me). The best thing is that the carpentry did not have a toxic level formaldehyde which made it really easy for us to continue living in the house and moving in after the renovation was completed. For this, we were really grateful and thankful to the interior designer and his carpenter. So now we have a nicely refurbished house to live in and the boy has a fully functioning room to call his own.
2024 was when we got started on a few more variety of sports, mainly those with rackets – pickle ball, squash and tennis. We also got ourselves badminton rackets, so weekends nowadays are a rush of some of these sports at the court downstairs. It’s a good mix and a nice way to get the stress out as well. My favourite? It’s got to be good old badminton and squash.
2024 has also brought about unexpected challenges throughout the year, one that has changed my life perspectives in many ways that I have never thought it would. I am glad that some of these episodes have come to an end, and I hope these doors will remain closed for the rest of my life.
For 2025, I am looking forward to a more refreshing year to learn new skills and embark on new experiences and adventures. I already have some ideas about what I wish to do so I am keeping my fingers crossed that I can manage to accomplish at least some of them before the the next year comes to an end. The zodiac says that the snake year will be a much better one for roosters, so I am also banking all my hopes this one comes true, both for my work and personal life.
Last but not least, I just finally managed to clean up all my spams for my Hungry Peepor blog posts and I’m hoping to keep it in better shape from next year onwards, so that I don’t miss out on anymore comments that come in to me through the blog next time.
Wishing all Hungry PeePor readers a merry 2025 ahead!
Ingredients:
- Oil: 2 tbsp
- Cherry tomato: 8, halved
- Egg: 2, yolks and whites separated
- Coriander: a few stalks
Method:
- Add oil in frying pan. Use a brush to rub and distribute the oil across pan.
- Place about 8 halved cherries at the top left of the pan to form a small circle. Form another small circle with the remaining 8 halved cherries at the top right.
- Turn on stove fire on low heat.
- Place 1 egg yolk in each small circle. Let cook for 30sec.
- Pour egg whites around tomatoes to form a big white circle in remaining parts of the pan.
- Quickly place coriander stalks at the bottom of the tomatoes to form the stalk of the flowers. Press it slightly into the egg whites.
- Cover with lid. Let cook for for another 30sec till whites are cooked and yolks are still slightly runny.
- Carefully remove onto a plate by scraping the sides of the whites.
Tricks:
- To cook a flower omelette with only one flower, use one yolk but the whites from 1.5 eggs so that the whites around it can be formed nicely. Alternatively, use a small baby pan to cook a one-flower omelette!
- Switch on the heat only after you’ve arranged the tomatoes and yolk. Otherwise you might rush into things and break the yolks easily.
Serving:
1 omelette with 2 flowers
