This particular attempt seeks to try out a third version, which uses a stronger lemon flavour, also because I am using less butter and no egg here. The result is a very crunchy cookie that has a very refreshing and much more obvious lemon flavour &#8211; one that is an obvious winner for those who love lemon flavours and cookies that are less buttery\/contains no egg.<\/p>\n<p><!--more--><\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li>Unsalted butter: 120g<\/li>\n<li>Caster sugar: 70g<\/li>\n<li>Lemon juice: 1 lemon<\/li>\n<li>Lemon rind: 1 lemon<\/li>\n<li>Plain flour: 170g<\/li>\n<li>Baking powder: 1\/4 tsp<\/li>\n<li>Salt: a pinch<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li>Preheat oven at 180 degrees Celsius.<\/li>\n<li>Cream butter and sugar together till light and fluffy.<\/li>\n<li>Add lemon juice and rind. Beat for a few seconds more to mix in.<\/li>\n<li>Sift plain flour, baking powder and salt into the creamed mixture.<\/li>\n<li>Slowly fold flour into mixture to form a cookie dough.<\/li>\n<li>Roll a tablespoon of dough and place onto greased paper on a baking tray.<\/li>\n<li>Flatten with a fork to create a pattern.
