Knowing her to be capable of a good appetite (she&#8217;s enviably slim), I jovially made a few easy-to-prepare petite dishes to give the illusion of a garden-themed feast.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">It was huge fun to chop up the mint leaves finely and strew them all over the dishes.\u00a0They fit remarkably well with every dish that was prepared. Here was how I prepared the sandwiches:<\/p>\n<p style=\"text-align: justify;\"><strong><em>Ingredients<\/em><\/strong>:<\/p>\n<ul>\n<li>\n<div style=\"text-align: justify;\">Bread: 2 slices, trimmed, sliced into quarters each<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Canned tuna in olive oil: 1 can, tuna removed<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Cheddar cheese (prepacked slices): 1 slice, divided into 8 portions<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Mozzarella cheese: 1 thin slice, lengthwise, divided into 8 portions<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Ham: 4 slices, halved<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Fresh mint leaves:\u00a01 handful\u00a0finely chopped, 1 handful\u00a0left whole<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Dill: 1 tsp<\/div>\n<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong><em>Method<\/em><\/strong>:<\/p>\n<ol>\n<li>\n<div style=\"text-align: justify;\">Spread olive oil from tuna can onto bread slices.<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Place 1 portion cheddar and mozzarella cheese each on top of bread.<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Toast or grill bread slices for 7min and remove from oven.<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Roll up the ham and place on top of toasted bread.<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Place a piece of mint leave on top of ham and secure everything with a toothpick.<\/div>\n<\/li>\n<li>\n<div style=\"text-align: justify;\">Toast everything for another 2 min. Remove and sprinkle with chopped mint leaves and dill to serve.<\/div>\n<\/li>\n<\/ol>\n<p><strong><em>Tricks<\/em>:<\/strong><\/p>\n<ul>\n<li style=\"text-align: justify;\">Use the remaining tuna to make a tuna mayonnaise which can be served with sliced cucumber. These cucumbers can\u00a0be easily decorated with the remaining mint leaves strewn on them, of course!<\/li>\n<li style=\"text-align: justify;\">The trimmed edges of the bread slices can be grilled together with the bread and served with the tuna mayonnaise.
