The marinated chicken is simply pan-fried till slightly browned, and the rest of the sauce helps to bring out the freshness in the chicken. It&#8217;s nice to eat this dish by itself without anything else, but if you&#8217;ve got rice, it would make this meal perfect!<\/p>\n<p><!--more--><\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li>Chicken meat: 800g (with some fatty bits), cut into small chunks<\/li>\n<li>Salt: 1\/2 tsp<\/li>\n<li>Sugar: 1\/2 tsp + 1\/2 tbsp<\/li>\n<li>Ginger juice: 25ml<\/li>\n<li>Egg: 1<\/li>\n<li>Water: 80ml<\/li>\n<li>Potato starch: 50g<\/li>\n<li>Plain flour: 50g<\/li>\n<li>Oil: 250ml<\/li>\n<li>Curry leaves: 30g<\/li>\n<li>Garlic: 3 cloves, finely chopped<\/li>\n<li>Ginger: 1.5&#8243; slice, finely chopped<\/li>\n<li>Oyster sauce: 1 tbsp<\/li>\n<li>Fish sauce: 1 tbsp<\/li>\n<li>Lime juice: 1\/2 tbsp<\/li>\n<li>Dark soy sauce: 1 tbsp<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li>Marinate chicken with salt, 1\/2 tsp sugar, ginger juice, egg, water, potato starch and plain flour. Leave overnight in fridge.<\/li>\n<li>Heat oil in wok till small bubbles emerge (not boiling). Shallow fry chicken till golden brown. Remove and set aside on serving plate.<\/li>\n<li>Remove excess oil from wok. Fry curry leaves, garlic &amp; ginger till fragrant and leaves are slightly crispy.<\/li>\n<li>Mix in oyster sauce, fish sauce, lime juice, 1\/2 tbsp sugar &amp; dark soy sauce.<\/li>\n<li>Pour sauce onto chicken to serve.<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-12034 alignnone\" src=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2021\/02\/Gan-Xiang-Ji-2.jpg\" alt=\"\" width=\"650\" height=\"426\" \/><\/p>\n<p><em><strong>Trick<\/strong><\/em>:<\/p>\n<ul>\n<li>\n<p style=\"text-align: justify;\">The sauce with the crispy garlic and ginger go so well with plain rice.
