The flavours of this cake is definitely something different from the usual serving of mousse cake that we get from the cafes in the malls &#8211; a unique flavour that isn&#8217;t available anywhere else as far as I know!<\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li>Digestive biscuit: 150g<\/li>\n<li>Salt: 1\/2 tsp<\/li>\n<li>Cocoa powder (or milo powder): 1 tsp<\/li>\n<li>Milk powder: 1 tsp<\/li>\n<li>Unsalted butter: 80g, melted<\/li>\n<li>Pandan leaves: 1 bunch<\/li>\n<li>Thai tea leaves: 4 tbsp<\/li>\n<li>Water: 250ml<\/li>\n<li>Sweetened condensed milk: 100ml<\/li>\n<li>Cream cheese: 350g<\/li>\n<li>Egg: 1<\/li>\n<li>Sugar: 40g<\/li>\n<li>Plain flour: 70g<\/li>\n<li>Icing sugar: 1 tbsp<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li>Blend together digestive biscuits, salt, cocoa powder &amp; milk powder.<\/li>\n<li>Add melted butter. Blend again to combine.<\/li>\n<li>Press mixture into a ring mould. Chill 15min in fridge.<\/li>\n<li>Preheat oven at 160 degrees.<\/li>\n<li>Place pandan leaves and tea leaves in water. Bring to a boil.<\/li>\n<li>Switch off heat. Leave to steep for 15min.<\/li>\n<li>Strain out 100ml of tea. Stir in condensed milk.<\/li>\n<li>Separately whisk cream cheese in a blender till smooth.<\/li>\n<li>Add in egg, sugar and plain flour. Blend till combined.<\/li>\n<li>Stir in tea concentrate and blend again till combined.<\/li>\n<li>Pour into ring mould. Bake 45min till firm.<\/li>\n<li>Chill 30min in fridge. Garnish with icing sugar and serve chilled with ice-cream.<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-12079 alignnone\" src=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2021\/03\/Thai-Tea-Mousse-Cake-2.jpg\" alt=\"\" width=\"650\" height=\"501\" \/><\/p>\n<p><em><strong>Trick<\/strong><\/em>:<\/p>\n<ul>\n<li>\n<p style=\"text-align: justify;\">The recipe says to bake the cake at 150 degrees Celsius for 45min.
