{"id":12548,"date":"2022-08-27T23:12:58","date_gmt":"2022-08-27T15:12:58","guid":{"rendered":"http:\/\/peepor.net\/pint\/blog\/?p=12548"},"modified":"2022-08-27T23:12:58","modified_gmt":"2022-08-27T15:12:58","slug":"slurping-up-my-brown-rice-mushroom-soup","status":"publish","type":"post","link":"https:\/\/peepor.net\/pint\/blog\/?p=12548","title":{"rendered":"Slurping Up My Brown Rice Mushroom Soup"},"content":{"rendered":"<p><em><strong><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-12549 alignnone\" src=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2022\/05\/Brown-Rice-Mushroom-Soup-2.jpg\" alt=\"\" width=\"650\" height=\"430\" \/><\/strong><\/em><\/p>\n<p><em><strong><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-12550 alignnone\" src=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2022\/05\/Brown-Rice-Mushroom-Soup-3.jpg\" alt=\"\" width=\"650\" height=\"485\" \/><\/strong><\/em><\/p>\n<p style=\"text-align: justify;\">This dish has a lovely mushroom fragrance to it, and is easy to slurp up, even on a hot summer day.<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: justify;\">The stock is simply delicious &#8211; possibly a nice dish to have if anyones is having a little hangover or craving for a nice soupy bowl of porridge.<\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li>Salt: 1\/2 tsp<\/li>\n<li>Thyme: 1 sprig<\/li>\n<li>Garlic: 1\/2 clove + 1\/2 clove (diced)<\/li>\n<li>Water: 3 cups<\/li>\n<li>Brown rice: 3\/4 cup<\/li>\n<li>Butter: 1 tbsp<\/li>\n<li>Olive oil: 1 tbsp<\/li>\n<li>Brown mushroom: 5, thinly sliced<\/li>\n<li>Shallot: 1, diced<\/li>\n<li>Tomato paste: 1 tbsp<\/li>\n<li>Plain flour: 2 tbsp<\/li>\n<li>White wine: 1\/2 cup<\/li>\n<li>Chicken stock: 2 cups<\/li>\n<li>Heavy cream: 1\/4 cup<\/li>\n<li>Light soy sauce: 1\/2 tbsp<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li>Combine salt, thyme, 1\/2 clove garlic &amp; water in a saucepan. Bring to a boil.<\/li>\n<li>Add brown rice to water. Cook on medium-low for 35min till tender.<\/li>\n<li>Drain rice &amp; discard thyme and garlic. Set aside both rice and stock from cooking the rice.<\/li>\n<li>Melt butter &amp; olive oil in a separate saucepan.<\/li>\n<li>Fry brown mushrooms for a few min till browned.<\/li>\n<li>Add shallots, 1\/2 clove diced garlic &amp; tomato paste. Cook 2min till softened.<\/li>\n<li>Sprinkle plain flour into saucepan. Stir till flour sticks to bottom.<\/li>\n<li>Add white wine to deglaze.<\/li>\n<li>Add stock and 3\/4 cup stock from cooking rice. Bring to boil and cook 15min.<\/li>\n<li>Add rice and cook 10min. The recipe added dried porcini mushrooms, which probably added more strongly to the flavours of this dish.
