It&#8217;s Hari Raya Puasa (a public holiday with an off-in-lieu on Monday) and I finally got to swim (away my fats) this morning.<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: justify;\">I don&#8217;t have any Malay or Muslim recipes to feature this time round, but here&#8217;s a really great recipe of soft white bread with corn for a much looked-forward to breakfast tomorrow. It&#8217;s not too difficult too, and supposedly a much better way to make the dough too with the pre-fermented sponge made separately to make the bread softer (I think). Plus, the boy loves corns, so that&#8217;s a double bonus.<\/p>\n<p>Plus, I used the batik table thrower in this picture lol<\/p>\n<p style=\"text-align: justify;\">Wishing myself and all my readers a happy holiday and a great weekend ahead!<\/p>\n<p><em><strong>Ingredients (Sponge)<\/strong><\/em>:<\/p>\n<ul>\n<li>Bread flour (strong white flour): 350g<\/li>\n<li>Instant dry yeast: 4g<\/li>\n<li>Water: 210g<\/li>\n<\/ul>\n<p><em><strong>Method (Sponge)<\/strong><\/em>:<\/p>\n<ul>\n<li>To create the sponge, mix bread flour with instant dry yeast and water using a dough hook on low speed for 3min till dry, firm and cool.<\/li>\n<li>Ferment 4hrs in airtight container at 27 degrees Celsius.<\/li>\n<\/ul>\n<p><em><strong>Ingredients (Dough):<\/strong><\/em><\/p>\n<ul>\n<li>Bread flour (strong white flour): 150g<\/li>\n<li>Milk powder: 15g<\/li>\n<li>Bread improver: 8g<\/li>\n<li>Instant dry yeast: 8g<\/li>\n<li>Sugar: 60g<\/li>\n<li>Salt: 10g<\/li>\n<li>Water: 75g<\/li>\n<li>Unsalted butter: 60g, diced (room temperature)<\/li>\n<li>Sweet corn (pat dry): 250g<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong> <strong>(Dough): <\/strong><\/em><\/p>\n<ol>\n<li>Using a dough hook on low speed, combine bread flour, milk powder, bread improver, instant dry yeast, sugar, salt and water.<\/li>\n<li>Cut sponge into 3 &#8211; 4 pieces. Add into dough and mix on medium speed over 1min.<\/li>\n<li>Add butter and mix 5min on high speed.<\/li>\n<li>Fold in sweet corn and mix 1min on low speed.<\/li>\n<li>Round up dough and rest 10min.<\/li>\n<li>Divide into 300g dough pieces and round up. Rest another 10min.<\/li>\n<li>Roll out and mould into cylindrical shape to fit into baking tin placed with greased paper. Prove 1hr till doubled.<\/li>\n<li>Bake 25min at 200 degrees Celsius till golden brown.<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-12735 aligncenter\" src=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2022\/10\/Sweet-Corn-Bread-3.jpg\" alt=\"\" width=\"500\" height=\"755\" \/><\/p>\n<p><em><strong>Serving<\/strong><\/em>:<br \/>\n2 medium-sized loaves<\/p>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 5px 5px 0;float:left;height:40px;\"><script src=\"https:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/peepor.net\/pint\/blog\/?p=12733\" send=\"true\" layout=\"button_count\" width=\"450\" show_faces=\"true\" font=\"verdana\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div>","protected":false},"excerpt":{"rendered":"<p>Today is a great day.
