If you love coconut, this is the dish for you. Using udon noodles here will be the best choice of all as it is thick so it goes very well with a rich broth (that&#8217;s my personal opinion). Alternatively, you can use thick rice noodles or silver pin noodles as equally good substitutes as well.<\/p>\n<p><!--more--><\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li>Sesame oil: 3 tsp<\/li>\n<li>Green onion: 4, white and green parts separated<\/li>\n<li>Frying oil: 2 tbsp<\/li>\n<li>Shiitake mushroom: 150g, finely sliced<\/li>\n<li>Oyster mushroom: 150g, finely sliced<\/li>\n<li>Light soy sauce: 1 tbsp<\/li>\n<li>Garlic: 2 cloves, finely chopped<\/li>\n<li>Ginger: 1&#8243;, grated<\/li>\n<li>Water: 2.5 cups<\/li>\n<li>Coconut milk: 400ml<\/li>\n<li>Chicken stock cube: 1<\/li>\n<li>Udon: 400g (3 packs)<\/li>\n<li>Chilli: 2, finely chopped<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li>Heat sesame oil in wok. Stir-fry white parts of green onions for 1min.<\/li>\n<li>Add in 2 tbsp oil. Add shiitake mushrooms and oyster mushrooms and fry 2min till softened.<\/li>\n<li>Add light soy sauce, garlic and ginger. Fry 3min.<\/li>\n<li>Add in water, coconut milk and chicken stock cube. Leave to boil, then reduce to medium heat.<\/li>\n<li>Stir in udon and remaining parts of green onion.<\/li>\n<li>Scoop noodles into bowls. Add chilli oil or chopped chilli padi to serve with.<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-13098 alignnone\" src=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2023\/10\/Mushroom-Coconut-Udon-3-1500x998.jpg\" alt=\"\" width=\"650\" height=\"432\" srcset=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2023\/10\/Mushroom-Coconut-Udon-3-1500x998.jpg 1500w, https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2023\/10\/Mushroom-Coconut-Udon-3-800x532.jpg 800w, https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2023\/10\/Mushroom-Coconut-Udon-3-768x511.jpg 768w, https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2023\/10\/Mushroom-Coconut-Udon-3.jpg 2000w\" sizes=\"auto, (max-width: 650px) 100vw, 650px\" \/><\/p>\n<p><em><strong>Trick:<\/strong><\/em><\/p>\n<ul>\n<li>\n<p style=\"text-align: justify;\">You can change the thickness of the broth by adjusting the proportion of water to coconut milk.
