So I resorted to using prawns to replace the oysters that are commonly used in this traditional Hokkien dish, hence the self-named dish.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"padding-left: 60px; text-align: center;\"><span style=\"color: #888888;\">* &#8216;<em>Orh<\/em>&#8216; = &#8216;<strong>oyster<\/strong>&#8216;<br \/>\n* &#8216;<em>Jian<\/em>&#8216; = &#8216;<strong>fried<\/strong>&#8216;<br \/>\n==&gt; &#8216;<strong>Fried Prawn Omelette&#8217;<\/strong> in essence<\/span><\/p>\n<p><strong><em>Ingredients<\/em><\/strong>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">Sweet potato flour: 110g<\/li>\n<li style=\"text-align: justify;\">Plain flour (optional): 1\/2 tbsp<\/li>\n<li style=\"text-align: justify;\">Rice flour (optional): 1 tbsp<\/li>\n<li style=\"text-align: justify;\">Salt: 1 tsp<\/li>\n<li style=\"text-align: justify;\">Water: 250ml<\/li>\n<li style=\"text-align: justify;\">Frying oil: 1 tbsp + 1 tsp<\/li>\n<li style=\"text-align: justify;\">Eggs: 2, lightly beaten<\/li>\n<li style=\"text-align: justify;\">Fresh small prawns: 15, washed and peeled<\/li>\n<li style=\"text-align: justify;\">Fish sauce: 2 tsp<\/li>\n<li style=\"text-align: justify;\">Chilli: 1 tbsp<\/li>\n<li style=\"text-align: justify;\">Pepper: to taste<\/li>\n<li style=\"text-align: justify;\">Small lemon: 1\/2<\/li>\n<li style=\"text-align: justify;\">Coriander leaves: to garnish<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong>:<\/em><\/p>\n<ol>\n<li style=\"text-align: justify;\">Mix sweet potato flour, plain flour, rice flour, salt and water together. Stir till no more lumps appear.<\/li>\n<li style=\"text-align: justify;\">Heat up 1 tbsp oil in wok. Pour 1 scoop of batter into wok to form a thin layer.<\/li>\n<li style=\"text-align: justify;\">Pour beaten eggs onto the batter after you see white bubbles forming on the batter.<\/li>\n<li style=\"text-align: justify;\">When the runny mixture has firmed up (you&#8217;ll be able to see the omelette turning golden brown at the edges) slice it up and push to one side of the wok.<\/li>\n<li style=\"text-align: justify;\">Add 1 tsp oil in wok to fry the prawns. Add fish sauce and stir-fry 1 min.<\/li>\n<li style=\"text-align: justify;\">Mix prawns with omelette. Add chilli and pepper to mixture and stir-fry.<\/li>\n<li style=\"text-align: justify;\">Squeeze juice of 1\/2 a lemon onto mixture and give it a quick stir.
