I hope next week turns out well too&#8230;<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: justify;\">Paglia e fieno is an Italian pasta recipe that uses egg and spinach fettuccine to resemble straw and hay. Using Gorgonzole cheese, which is a slightly stronger cheese, gives this dish a stronger cheesy taste, but not too strong if you add just enough. Not too much. If you don&#8217;t like cheese, you can replace it with cream and other milder cheese.<\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li>Butter: 2 tbsp<\/li>\n<li>Fresh sage: a few leaves, finely chopped + extra for garnish<\/li>\n<li>White onion: 1, finely chopped<\/li>\n<li>Gorgonzole cheese: 1 cup, diced<\/li>\n<li>Mascarpone cheese: 3 tbsp<\/li>\n<li>Milk: 75ml<\/li>\n<li>Paglia e fieno: 275g<\/li>\n<li>Ground walnut: 1\/2 cup<\/li>\n<li>Parmesan cheese: 2 tbsp<\/li>\n<li>Ground blackpepper: to taste<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li>Melt butter in saucepan.<\/li>\n<li>Add sage &amp; onions. Fry till translucent.<\/li>\n<li>Add in gorgonzole cheese &amp; mascarpone cheese. Stir with wooden spoon till melting.<\/li>\n<li>Add in milk. Keep stirring.<\/li>\n<li>Cook paglia e fieno in boiling water with salt till tender &amp; firm. Drain.<\/li>\n<li>Scoop pasta directly into saucepan with cheese.<\/li>\n<li>Toss in walnut, Parmesan cheese &amp; blackpepper. Crush it into pieces and sprinkle some onto the pasta to serve.
