I love roasted bell peppers. I love coriander. Mix them together and viola! They become a great salad. This recipe is really easy to make, and by itself actually makes for a great meal already. Yes, I can survive on salad alone for my meals, so I love fresh, simple dishes like this. <\/p>\n<p><!--more--><\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li>Corn cob: 3, brushed with salt and olive oil<\/li>\n<li>Bell pepper: 1 red, 1 green, 1 yellow, brushed with salt and olive oil<\/li>\n<li>Prawn: 15, deshelled, deveined<\/li>\n<li>Cumin: 1\/2 tsp<\/li>\n<li>Paprika: 1\/4 tsp<\/li>\n<li>Salt: a pinch + 1\/2 tsp<\/li>\n<li>Avocado: 2, sliced<\/li>\n<li>Shallot: 2, finely chopped<\/li>\n<li>Spring onion: 1 stalk, finely chopped<\/li>\n<li>Coriander: 1 stalk, finely chopped<\/li>\n<li>Lime: 2<\/li>\n<li>Olive oil: 6 tbsp<\/li>\n<li>Ground blackpepper: 1\/2 tsp<\/li>\n<li>Honey: 1 tsp<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Grill corn cobs for 20min on the high shelf in the oven till lightly browned. Turn it at the halfway mark. Slice them to remove corn kernels into a mixing bowl.<\/li>\n<li style=\"text-align: justify;\">Grill bell peppers for 30min on the high shelf in the oven till charred. Peel skin away. Slice them and combine with corn kernels.<\/li>\n<li style=\"text-align: justify;\">Fry prawns with cumin, paprika and a pinch of salt. Set aside.<\/li>\n<li style=\"text-align: justify;\">Add in avocados, shallot, spring onion, coriander, lime juice, olive oil, salt, blackpepper &amp; honey.<\/li>\n<li style=\"text-align: justify;\">Stir to mix.
