You&#8217;ve still got to julienne the carrots which is an integral ingredient for this dish and what gives it colour. Otherwise, you can just add in the beansprouts and it would still be sufficient but definitely makes it less characteristic of the usual plate of bee hoon stir-fry.<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: justify;\">I love to eat noodles. Bee hoon falls into this category of food that I like as well because if cooked nicely, it&#8217;s very easy and satisfying to slurp up. Fried bee hoon is also a favourite among catering options, because it goes so so well with all the other food items on the menu &#8211; curry chicken, mixed vegetables, braised meat and so on. I love to eat this alongside the curry because the noodles soak up the gravy so well.\u00a0<\/p>\n<p style=\"text-align: justify;\">I believe the ultimate reason why I love my plate of bee hoon so much is because I use fish sauce to season it. Fish sauce makes everything yummy. I can&#8217;t live without it.\u00a0<\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li>Oil: 2 tbsp<\/li>\n<li>Onion: \u00bd, finely chopped<\/li>\n<li>Garlic: 2 cloves, finely chopped<\/li>\n<li>Carrot: 1\/2, julienned<\/li>\n<li>Beansprout: 50g<\/li>\n<li>Tofu skin: 50g, cut into strips<\/li>\n<li>Bee hoon: 3 slices (150g), soaked in hot water and drained<\/li>\n<li>Shaoxing wine: 2 tbsp<\/li>\n<li>Fish sauce: 2 tbsp<\/li>\n<li>Salt: \u00bd tsp<\/li>\n<li>White pepper: to taste<\/li>\n<li>Spring onion: 1 stalk, finely chopped<\/li>\n<li>Green or red chilli: 1, finely chopped<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Heat oil in wok. Saute onion and garlic till fragrant.<\/li>\n<li style=\"text-align: justify;\">Stir in carrot. Saute for 2min.\u00a0<\/li>\n<li style=\"text-align: justify;\">Stir in beansprout and beancurd skin. Fry for 1min.<\/li>\n<li style=\"text-align: justify;\">Stir in bee hoon, shaoxing wine, fish sauce, salt &amp; white pepper. Add too much wine or water and it immediately becomes soggy; add in none at all and it tastes like hay.
