This time round with an easygoing tomato sauce with mushrooms, chilli and garlic, exploring a fusion take of the usual tomato spaghetti sauce. This version is definitely much lighter, not so dense, not so heavy, and easier to prepare with little lead time required.\u00a0<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: justify;\">Love the flower garnishes I found at the supermarket. This dish couldn&#8217;t look better! And with this dish, I wish all mothers out there a Happy Mother&#8217;s Day!<\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li>Instant noodles: 2 packs<\/li>\n<li>Water: 2.5 cups<\/li>\n<li>Chicken stock cube: 1<\/li>\n<li>Oil: 2 tbsp<\/li>\n<li>White onion: 1, finely chopped<\/li>\n<li>Red chilli: 2, seeds removed, julienned<\/li>\n<li>Garlic: 1 clove, finely chopped<\/li>\n<li>Tomato: 1, skin removed, deseeded &amp; diced<\/li>\n<li>Minced pork: 200g<\/li>\n<li>Button mushroom: 100, sliced<\/li>\n<li>Ketchup: 3 tbsp<\/li>\n<li>Shaoxing wine: 2 tbsp<\/li>\n<li>Coriander: 1 stalk, chopped<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Cook noodles with water and chicken stock cube. There should only be a bit of stock left at the end of the cooking. Set noodles aside.<\/li>\n<li>Heat oil in wok. Fry onion, red chilli &amp; garlic. Stir till fragrant.<\/li>\n<li>Add in tomato, pork &amp; mushrooms. Stir for 1min.<\/li>\n<li>Add in ketchup &amp; shaoxing wine. Stir for 1min.<\/li>\n<li>Stir in noodles.
