You can prepare it using your favourite seafood (shell fish, prawns, fish fillets) and make it into your own pot of favourite stew based on your individual preferences. I love mine with the simpler ingredients (less shell fish please) as I want to savour the soup and its burst of flavours from the base ingredients.\u00a0<\/p>\r\n<p><!--more--><\/p>\r\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\r\n<ul>\r\n<li>Onion: 1, peeled &amp; quartered<\/li>\r\n<li>Garlic: 3 cloves, peeled &amp; bruised<\/li>\r\n<li>Lemongrass: 2 stalks, outer leaves removed, trimmed &amp; bruised<\/li>\r\n<li>Kaffir lime leaf: 4, crushed<\/li>\r\n<li>Water: 6 cups<\/li>\r\n<li>Clam (or mussel): 400g, scrubbed &amp; cleaned<\/li>\r\n<li>Prawn: 300g (about 8), heads removed, deveined\u00a0<\/li>\r\n<li>Squid: 200g, cleaned, skin removed, cut into rings<\/li>\r\n<li>Fish fillet: 200g, chunked<\/li>\r\n<li>Crab meat (optional): 100g<\/li>\r\n<li>Dried sour fruit: 1 piece<\/li>\r\n<li>Red chilli: 2, deseeded<\/li>\r\n<li>Salt: 1 tsp<\/li>\r\n<li>Ground white pepper: 1 tsp<\/li>\r\n<li>Sugar: 1 tsp<\/li>\r\n<li>Fish sauce: 2 tbsp<\/li>\r\n<li>Coriander: 1 stalk, chopped<\/li>\r\n<\/ul>\r\n<p><em><strong>Method<\/strong><\/em>:<\/p>\r\n<ol>\r\n<li style=\"text-align: justify;\">Place onion, garlic, lemongrass &amp; kaffir lime leaves in water. Bring to a boil. Simmer for 5min.<\/li>\r\n<li style=\"text-align: justify;\">Discard ingredients. Add clams, prawns, squid, fish fillet &amp; crab meat including the juice from the seafood. Simmer 1min till cooked.<\/li>\r\n<li style=\"text-align: justify;\">Add dried sour fruit, red chilli, salt, ground white pepper, sugar &amp; fish sauce. Stir to mix.<\/li>\r\n<li style=\"text-align: justify;\">Garnish with coriander.
