I realised that potatoes are really versatile to cook, and they could create a bundle of surprises, if their potential flavours are maximised.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p><strong><em>Ingredients<\/em><\/strong>:<\/p>\n<ul>\n<li style=\"text-align: justify;\"><strong><span style=\"text-decoration: underline;\"><a title=\"Charlotte Potatoes\" href=\"http:\/\/completegarden.wordpress.com\/2008\/07\/30\/charlotte-and-desiree-potato-identification\/\" target=\"_blank\">Small Charlotte potatoes<\/a><\/span><\/strong>: 6 pieces, scrubbed, washed, pat dry with towel<\/li>\n<li style=\"text-align: justify;\">Boiling water: enough to cover potatoes<\/li>\n<li style=\"text-align: justify;\">Butter: 1 tbsp<\/li>\n<li style=\"text-align: justify;\">Olive oil: 1 tbsp<\/li>\n<li style=\"text-align: justify;\">Salt: 1\/2 tsp<\/li>\n<li style=\"text-align: justify;\">Ground pepper: a dash<\/li>\n<li style=\"text-align: justify;\">Basil leaves: 6 pieces, chopped coarsely, half for cooking and half for garnish<\/li>\n<li style=\"text-align: justify;\">White mushrooms: 6 stalks, skin removed, washed and diced<\/li>\n<li style=\"text-align: justify;\">Tomato: 1, washed and diced<\/li>\n<li style=\"text-align: justify;\">Pesto sauce: 1 tbsp<\/li>\n<\/ul>\n<p><strong><em>Method<\/em><\/strong>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Add potatoes and a pinch of salt in boiling water. Microwave on high heat for 8-10 mins.<\/li>\n<li style=\"text-align: justify;\">Heat butter and olive oil in pan. Place boiled potatoes onto pan and season with salt and ground pepper.<\/li>\n<li style=\"text-align: justify;\">Squash potatoes lightly with a spoon without breaking them up. Leave potatoes in pan for 5mins, flipping them over occasionally.<\/li>\n<li style=\"text-align: justify;\">Serve potatoes onto a plate and set aside.<\/li>\n<li style=\"text-align: justify;\">Continue heating the remaining oil and butter in the pan. Add remaining ingredients and fry for 1min.<\/li>\n<li style=\"text-align: justify;\">Pour sauce onto potatoes and garnish with remaining basil leaves.<\/li>\n<li style=\"text-align: justify;\">Serve as a starter or main dish.<\/li>\n<\/ol>\n<p><strong><em>Tricks<\/em>:<\/strong><\/p>\n<ul>\n<li style=\"text-align: justify;\">The squashing of the potatoes will allow the fragrance of the butter to seep in and make them more flavourful.<\/li>\n<li style=\"text-align: justify;\">The basil leaves enhance the flavour of the already sinful pesto sauce. Alternatively, make your own pesto sauce with fresh basil leaves, olive oil and a pinch of salt.<\/li>\n<li style=\"text-align: justify;\">Add chilli to spice it up further!
