There&#8217;s probably no other way for me to savour the festive atmosphere back home, except to cook up some of my favourites here from among the list of my mum&#8217;s best dishes.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">And of course, this recipe blog deserves the elevated status of being my first one of 2011! Another egg recipe! \ud83d\ude44<\/p>\n<p style=\"text-align: justify;\"><strong><em>Ingredients for chicken broth:<\/em><\/strong><\/p>\n<ul>\n<li style=\"text-align: justify;\">Water: 3 cups<\/li>\n<li style=\"text-align: justify;\">Chicken stock cube: 1<\/li>\n<li style=\"text-align: justify;\">Sesame oil: 1 tsp<\/li>\n<li style=\"text-align: justify;\">Light soy sauce: 1 tbsp<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong><em>Ingredients for omelette:<\/em><\/strong><\/p>\n<ul>\n<li style=\"text-align: justify;\">Egg: 2, beaten<\/li>\n<li style=\"text-align: justify;\">Sesame oil: 1 tsp<\/li>\n<li style=\"text-align: justify;\">White pepper: to taste<\/li>\n<li style=\"text-align: justify;\">Soy sauce: 1 tsp<\/li>\n<li style=\"text-align: justify;\">Minced pork: 120g, seasoned with 1\/2 tsp sesame oil, 1 tsp soy sauce &amp; 1 tsp corn starch<\/li>\n<li style=\"text-align: justify;\">Vermicelli: 1 bunch, soaked in water for 5min<\/li>\n<li style=\"text-align: justify;\">Chilli padi: 4, chopped finely<\/li>\n<li style=\"text-align: justify;\">Spring onion: 1 stalk, chopped finely<\/li>\n<li style=\"text-align: justify;\">Frying oil: 3 tbsp<\/li>\n<li>White pepper: to taste<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong><em>Method<\/em>:<\/strong><\/p>\n<ol>\n<li style=\"text-align: justify;\">Prepare broth by boiling water with chicken stock cube, sesame oil and soy sauce for 3min. Set aside.<\/li>\n<li style=\"text-align: justify;\">Add sesame oil, pepper and soy sauce into beaten egg.<\/li>\n<li style=\"text-align: justify;\">Stir seasoned minced pork, vermicelli, chillies and 1\/2 of chopped spring onions into egg mixture.<\/li>\n<li style=\"text-align: justify;\">Heat up oil in frying pan. Pour egg mixture into saucepan and tilt it to distribute the mixture.<\/li>\n<li style=\"text-align: justify;\">Leave omelette to fry for 3min till golden brown.<\/li>\n<li style=\"text-align: justify;\">Cut omelette into quarters or eighths and flip them around.<\/li>\n<li style=\"text-align: justify;\">Leave to fry for another 2min till golden brown.<\/li>\n<li style=\"text-align: justify;\">Add broth to the saucepan and leave to simmer for 2min. I tried the Sainsbury brand before and it tasted like s***. I am personally a loyal fan of <span style=\"text-decoration: underline;\"><strong><a title=\"Knorr Stock Cubes\" href=\"http:\/\/www.knorr.co.uk\/About-Knorr\/Products\/Knorr-Original.aspx\" target=\"_blank\">Knorr<\/a><\/strong><\/span> stock cubes.<\/li>\n<\/ul>\n<p><strong><em>Disclaimers<\/em><\/strong>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">The vermicelli sold here is much thicker and, I think, of Vietnamese origin. We couldn&#8217;t find the usual threaded types here and so had to make do with this.<\/li>\n<li style=\"text-align: justify;\">I couldn&#8217;t have cooked this dish at a better time.
