But! Surprise! Surprise! The lack of ground peanuts here, plus a reluctance on my part to grind the nuts myself with a pestle and mortar, has allowed us to enjoy 2 other types of lip-smacking cookies which we would otherwise not have thought of making. How I love life&#8217;s little surprises and the blessings in disguise.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">I went over to a friend&#8217;s house last Tuesday for a baking session to try out the almond cookies. It was a little over-baked, I think, but tasty nevertheless. This batch today is supposed to be an improved version of that first attempt.<\/p>\n<p style=\"text-align: justify;\">Baking alone by oneself can never be as fun as when somebody is around while one bakes. At least there is somebody to talk to, to give your fare a go after the oven pops, or at least sop up the redolence of freshly-baked delights. It makes me recall the time when I was baking mooncakes with my mum. By this time of the year, she would most probably have made her purchases of Chinese New Year goodies, but how I wish I could send some of these back home to let her try.<\/p>\n<p><strong><em>Ingredients<\/em>: <\/strong><\/p>\n<ul>\n<li style=\"text-align: justify;\">Ground almond powder: 300g<\/li>\n<li style=\"text-align: justify;\">Castor sugar: 180g (3\/4 cup)<\/li>\n<li style=\"text-align: justify;\">Plain flour: 250g (2.5 cups), sifted<\/li>\n<li style=\"text-align: justify;\">Salt: 1 tsp<\/li>\n<li style=\"text-align: justify;\">Vanilla essence: 1 tsp<\/li>\n<li style=\"text-align: justify;\">Vegetable oil: 250ml (slightly less than 1 cup)<\/li>\n<li style=\"text-align: justify;\">Egg: 1, beaten with 3 tbsp water<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Preheat oven to 200 deg. Prepare a greased baking tray and set aside.<\/li>\n<li style=\"text-align: justify;\">Mix almond powder, sugar, flour and salt together.<\/li>\n<li style=\"text-align: justify;\">Add vanilla essence. Then gradually add oil into flour while kneading the mixture.<\/li>\n<li style=\"text-align: justify;\">Knead till sugar has mostly melted and mixture does not crumble anymore.<\/li>\n<li style=\"text-align: justify;\">Knead mixture into small round balls and place on baking tray.<\/li>\n<li style=\"text-align: justify;\">Glaze top of balls with beaten egg.<\/li>\n<li style=\"text-align: justify;\">Poke a hole in the middle with a straw (or end of ballpoint pen) and bake for 15min.<\/li>\n<li style=\"text-align: justify;\">Remove from oven and leave to cool for 15min before serving.<\/li>\n<\/ol>\n<p><a href=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2011\/01\/Almond-Cookies-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"Almond Cookies 2\" src=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2011\/01\/Almond-Cookies-2.jpg\" alt=\"\" width=\"500\" height=\"640\" \/><\/a><\/p>\n<p><strong><em>Tricks<\/em><\/strong>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">Knead the dough as much as you can before forming them into balls, so that the sugar melts completely.<\/li>\n<li style=\"text-align: justify;\">I used less sugar than was originally recommended by a recipe, and it turned out sweet enough, so diabetics could still consider cutting the sugar down by 30g or so.<\/li>\n<li style=\"text-align: justify;\">This recipe was adapted from a peanut cookie recipe, so if you replace the ground almond with ground peanut powder, it would work perfectly well too.<\/li>\n<li style=\"text-align: justify;\">For a varied twist to this cookie, please refer to the &#8216;<strong><a title=\"Coconut Cookies\" href=\"https:\/\/peepor.net\/pint\/blog\/?p=1832\" target=\"_blank\" rel=\"noopener\">Coconut Cookies<\/a><\/strong>&#8216; recipe.<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong><em>Serving<\/em><\/strong>:<br \/>\nMakes about 40 medium-sized cookies<\/p>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 5px 5px 0;float:left;height:40px;\"><script src=\"https:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/peepor.net\/pint\/blog\/?p=1826\" send=\"true\" layout=\"button_count\" width=\"450\" show_faces=\"true\" font=\"verdana\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div>","protected":false},"excerpt":{"rendered":"<p>I&#8217;ve actually wanted to make peanut cookies, because I personally savour the fragrance of peanuts more than that of almond.
