You can either call this a rip-off of the original or a creation of a new cookie recipe. All I did was replace the ground almond powder from the <strong><span style=\"text-decoration: underline;\">&#8216;<a title=\"Chinese Almond Cookies\" href=\"https:\/\/peepor.net\/pint\/blog\/?p=1826\" target=\"_blank\" rel=\"noopener\">Chinese Almond Cookies<\/a><\/span><\/strong>&#8216; recipe with dessicated coconut. &#8216;And why not?&#8217; I thought, since both have similar textures.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">It&#8217;s simply amazing how a change in just one ingredient could lead to uniquely different flavoured and looking cookies. The aroma from the coconut was irrepressible, even before the cookies were baked.<\/p>\n<p><strong><em>Ingredients<\/em><\/strong>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">Sweetened desiccated coconut: 300g (2.5 cups)<\/li>\n<li style=\"text-align: justify;\">Castor sugar: 80g (a bit less than 1\/2 cup)<\/li>\n<li style=\"text-align: justify;\">Plain flour: 250g (2.5 cups), sifted<\/li>\n<li style=\"text-align: justify;\">Salt: 1 tsp<\/li>\n<li style=\"text-align: justify;\">Vanilla essence: 1 tsp<\/li>\n<li style=\"text-align: justify;\">Vegetable oil: 250ml\u00a0 (slightly less than 1 cup)<\/li>\n<li style=\"text-align: justify;\">Egg: 1, beaten with 3 tbsp water<\/li>\n<\/ul>\n<p><strong><em>Method<\/em><\/strong>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Preheat oven to 200 deg. Prepare a greased baking tray and set aside.<\/li>\n<li style=\"text-align: justify;\">Mix coconut, sugar, flour and salt together.<\/li>\n<li style=\"text-align: justify;\">Add vanilla essence. Then gradually add oil into flour while kneading the mixture.<\/li>\n<li style=\"text-align: justify;\">Knead till sugar has mostly melted and mixture does not crumble anymore.<\/li>\n<li style=\"text-align: justify;\">Knead mixture into small round balls and place on baking tray.<\/li>\n<li style=\"text-align: justify;\">Glaze top of balls with beaten egg and poke a hole in the middle with a straw (or tip of pen).<\/li>\n<li style=\"text-align: justify;\">Bake for 15min.<\/li>\n<li style=\"text-align: justify;\">Remove from oven and leave to cool for 15min before serving.<\/li>\n<\/ol>\n<p style=\"text-align: center;\"><a href=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2011\/01\/Coconut-Cookies-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1833 aligncenter\" title=\"Coconut Cookies 2\" src=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2011\/01\/Coconut-Cookies-2.jpg\" alt=\"\" width=\"500\" height=\"652\" srcset=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2011\/01\/Coconut-Cookies-2.jpg 600w, https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2011\/01\/Coconut-Cookies-2-230x300.jpg 230w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p><strong><em>Tricks<\/em><\/strong>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">If using <span style=\"text-decoration: underline;\">unsweetened<\/span> desiccated coconut, use 120g (2.5cups) and increase the amount of sugar to 180g (\u00be cup). The rest of the ingredients remain the same.<\/li>\n<li style=\"text-align: justify;\">The poking of holes and glazing the top of the cookies were supposed to emulate the shape of Chinese ingots.
