However, instead of following them in a doggedly step-by-step manner, I&#8217;ve chosen to adapt them according to my own taste and convenience (i.e. available ingredients).<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">This specific delicacy came from the very first dish in the list: &#8216;Braised Noodles with Shredded Pork and Preserved Vegetables&#8217;, by chef Li of the Wah Lok restaurant.<\/p>\n<p><strong><em>Ingredients<\/em>:<\/strong><\/p>\n<ul>\n<li style=\"text-align: justify;\">Koka noodles: 1 packet (or substitute with yellow noodles)<\/li>\n<li style=\"text-align: justify;\">Boiling water: 1 cup<\/li>\n<li style=\"text-align: justify;\">Chicken stock cube: 1\/2 cube<\/li>\n<li style=\"text-align: justify;\">Oil: 1 tbsp<\/li>\n<li style=\"text-align: justify;\">Sichuan preserved vegetables: 1\/2 cup, sliced thinly<\/li>\n<li style=\"text-align: justify;\">Dried mushroom: 2, soaked in water for 1 hr, sliced<\/li>\n<li style=\"text-align: justify;\">Shitake mushroom: 3, sliced<\/li>\n<li style=\"text-align: justify;\">Shaoxing wine: 1 tbsp<\/li>\n<li style=\"text-align: justify;\">Lean pork: 120g, sliced thinly, coated with cornstarch<\/li>\n<li style=\"text-align: justify;\">Dark soya sauce: 1 tbsp<\/li>\n<li style=\"text-align: justify;\">Oyster sauce: 1 tsp<\/li>\n<li style=\"text-align: justify;\">Sugar: a pinch<\/li>\n<li style=\"text-align: justify;\">Sesame oil: 1 tsp<\/li>\n<li style=\"text-align: justify;\">White pepper: a pinch<\/li>\n<li style=\"text-align: justify;\">Parsley: 1 stalk, chopped<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong><em>Method<\/em><\/strong>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Microwave noodles in boiling water with stock cube. Set aside.<\/li>\n<li style=\"text-align: justify;\">Heat oil in frying pan.<\/li>\n<li style=\"text-align: justify;\">Add preserved vegetables, mushrooms and wine. Fry for 1min.<\/li>\n<li style=\"text-align: justify;\">Add pork and dark soya sauce. Stir-fry till cooked.<\/li>\n<li style=\"text-align: justify;\">Add noodles, oyster sauce, sugar, sesame oil and pepper. Leave to simmer for 2mins.<\/li>\n<li style=\"text-align: justify;\">Garnish with parsley to serve.<\/li>\n<\/ol>\n<p><em><strong>Tricks<\/strong>:<\/em><\/p>\n<ul>\n<li style=\"text-align: justify;\">Rinse the preserved vegetables in water twice before cooking to wash away the excess salt.
