I started baking this bread about 5 years ago, when I saw the recipe on the cardboard box of the <em>Post<\/em> banana nut crunch cereals. Thought I&#8217;ll give it a try. It was a simple, fuss-free and dummy-proof recipe and worked amazingly.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">In any case, the recipe on the cardboard box has been changed to &#8216;Chocolate Banana Bread&#8217;. There&#8217;s Buttermilk involved &#8211; this ingredient tends to complicate everything, and is not easily available in local supermarkets, so I&#8217;m not sure if it would be worth a try any time soon.<\/p>\n<p style=\"text-align: justify;\"><strong><em>Ingredients<\/em><\/strong>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">Plain flour: 1 1\/2 cups, sifted<\/li>\n<li style=\"text-align: justify;\">Caster sugar: 1\/2 cup<\/li>\n<li style=\"text-align: justify;\">Baking powder: 2 tsp<\/li>\n<li style=\"text-align: justify;\">Baking soda: 1\/2 tsp<\/li>\n<li style=\"text-align: justify;\">Salt: 1\/2 tsp<\/li>\n<li style=\"text-align: justify;\">Egg: 2<\/li>\n<li style=\"text-align: justify;\">Banana: 1 1\/2 cups, mashed (about 2-3)<\/li>\n<li style=\"text-align: justify;\">Oil: 1\/4 cup<\/li>\n<li style=\"text-align: justify;\">Water: 1\/4 cup<\/li>\n<li style=\"text-align: justify;\">Banana essence: 1 tsp<\/li>\n<li style=\"text-align: justify;\"><em>Post<\/em> Banana Nut Crunch cereals: 1 1\/2 cups<\/li>\n<li style=\"text-align: justify;\">Walnuts: 1 cup, chopped (or almond slices, 1\/2 cup)<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong><em>Method<\/em><\/strong>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Preheat oven to 170 degrees.<\/li>\n<li style=\"text-align: justify;\">Mix flour, sugar, baking powder, baking soda and salt in large bowl.<\/li>\n<li style=\"text-align: justify;\">Beat eggs in small bowl.<\/li>\n<li style=\"text-align: justify;\">Stir in bananas, oil, water and essence.<\/li>\n<li style=\"text-align: justify;\">Add banana mixture to flour and stir till batter is just moistened (lumpy texture).<\/li>\n<li style=\"text-align: justify;\">Stir in cereals and walnuts. Pour everything into a greased loaf pan.<\/li>\n<li style=\"text-align: justify;\">Bake for 55min. Cool for 10min before removing from pan.<\/li>\n<\/ol>\n<p><a href=\"http:\/\/www.peepor.net\/pint\/blog\/wp-content\/uploads\/2012\/03\/Double-Banana-Bread-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2648 alignleft\" title=\"Double Banana Bread 2\" alt=\"\" src=\"http:\/\/www.peepor.net\/pint\/blog\/wp-content\/uploads\/2012\/03\/Double-Banana-Bread-2.jpg\" width=\"650\" height=\"495\" srcset=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2012\/03\/Double-Banana-Bread-2.jpg 700w, https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2012\/03\/Double-Banana-Bread-2-300x228.jpg 300w\" sizes=\"auto, (max-width: 650px) 100vw, 650px\" \/><\/a><em> <\/em><\/p>\n<p><strong><em>Tricks<\/em><\/strong>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">Store bread in fridge overnight for easier slicing.<\/li>\n<li style=\"text-align: justify;\">Use ramekins or small individual baking pots to bake these in instead, to produce small little pots of muffins.<\/li>\n<li style=\"text-align: justify;\">I replaced about 1 tsp of baking powder with 1 tsp of double-acting baking powder to allow the bread to rise more.<\/li>\n<\/ul>\n<p><strong><em>Disclaimer<\/em><\/strong>:<\/p>\n<ul>\n<li>Such methods of baking tend to generate a hybrid of a cake-and-bread effect.
