Apart from the Thai red curry and the chilli that produce the apparent orangey tinge, the other key ingredient in this dish is the Kaffir lime leaves &#8211; a herb that gives out a particularly unique taste which further distinguishes it from all other types of fish cake.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">Just last Sunday, I saw a Thai fish cake recipe in the Sunday Times Lifestyle section. I thought to myself it probably wouldn&#8217;t take me too much effort to make this dish, since most of the job would be done by my most helpful kitchen assistant &#8211; the kitchen blender &#8211; anyway.<\/p>\n<p style=\"text-align: justify;\"><strong><em>Ingredients<\/em><\/strong>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">White firm-fleshed fish fillet (cod, snapper, pollack or hake): 800g, pat dry &amp; sliced into chunks<\/li>\n<li style=\"text-align: justify;\">Cornflour: 5 tbsp<\/li>\n<li style=\"text-align: justify;\">Fresh chilli: 4, chopped<\/li>\n<li style=\"text-align: justify;\">Chilli paste: 2 tbsp (optional)<\/li>\n<li style=\"text-align: justify;\">Red curry paste: 4 tbsp<\/li>\n<li style=\"text-align: justify;\">Sweet chilli sauce: 4 tbsp<\/li>\n<li style=\"text-align: justify;\">Kaffir lime leaves: 7, washed and cut into thin strips<\/li>\n<li style=\"text-align: justify;\">Fish sauce: 4 tbsp<\/li>\n<li style=\"text-align: justify;\">Coconut cream: 5 tbsp<\/li>\n<li style=\"text-align: justify;\">Garlic: 1 clove, chopped<\/li>\n<li style=\"text-align: justify;\">Ginger: thumb-length, chopped<\/li>\n<li style=\"text-align: justify;\">Egg: 2 (small)<\/li>\n<li style=\"text-align: justify;\">French beans: 120g, chopped into small chunks (optional)<\/li>\n<li style=\"text-align: justify;\">Spring onion: 4 stalks, chopped finely<\/li>\n<li style=\"text-align: justify;\">Fresh coriander: 2 stalks, chopped finely<\/li>\n<li style=\"text-align: justify;\">Salt: to taste<\/li>\n<li style=\"text-align: justify;\">Pepper: to taste<\/li>\n<li style=\"text-align: justify;\">Oil: for frying<\/li>\n<li style=\"text-align: justify;\">Lime: for serving<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong><em>Method<\/em><\/strong>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Blend everything together except for the French beans, spring onions, coriander, salt, pepper, oil and lime.<\/li>\n<li style=\"text-align: justify;\">Mix in the rest of the ingredients (except oil and lime) and stir till evenly distributed.<\/li>\n<li style=\"text-align: justify;\">Heat oil in wok. Spoon a handful of the mixture into wok and flatten with spoon.<\/li>\n<li style=\"text-align: justify;\">Cook each side for 1 min, till lightly browned.<\/li>\n<li style=\"text-align: justify;\">Place on kitchen paper towels to absorb oil.<\/li>\n<li style=\"text-align: justify;\">Serve with sweet chilli sauce and lime wedges.<\/li>\n<\/ol>\n<p style=\"text-align: justify;\"><strong><em>Tricks<\/em><\/strong>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">The browning of the fish cake will only be even when there is sufficient oil coating the base of the wok.<\/li>\n<li style=\"text-align: justify;\">The herbs are mixed in after the blending of the rest of the ingredients so that the fragrance of the herbs remain fresh.
