This year, I&#8217;m trying something that&#8217;s similar yet a little bit different &#8211; mooncake piglet cookies. These are flatter in shape and do not have white lotus paste, resembling those that are sold in colourful baskets at the local neighbourhood bakeries.<\/p>\n<p style=\"text-align: justify;\">Crunch! Crunch! Oink! Oink!<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">Golden syrup: 360g<\/li>\n<li style=\"text-align: justify;\">Alkaline water: 12g (about 3\/4 tsp)<\/li>\n<li style=\"text-align: justify;\">Peanut oil: 180g<\/li>\n<li style=\"text-align: justify;\">Hong Kong flour: 600g + extra for dusting the <strong><a title=\"Mooncake Piglet Moulds In Many Disguises\" href=\"https:\/\/peepor.net\/pint\/blog\/?p=5642\" target=\"_blank\">moulds<\/a><\/strong><\/li>\n<li style=\"text-align: justify;\">Red beans: 60 pieces, washed and dried<\/li>\n<li style=\"text-align: justify;\">Glaze: 1 tbsp melted butter + 1\/2 tbsp honey<\/li>\n<\/ul>\n<p><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Combine syrup, alkaline water and oil. Mix well.<\/li>\n<li style=\"text-align: justify;\">Sift flour into a mixing bowl. Make a hole in the center of flour, then pour in syrup mixture.<\/li>\n<li style=\"text-align: justify;\">Mix everything into a soft dough. Cover with damp cloth and leave to rest for 20 min.<\/li>\n<li style=\"text-align: justify;\">Preheat oven at 180 degrees.<\/li>\n<li style=\"text-align: justify;\">Lightly dust the moulds with flour so that the dough can be removed from them easily.<\/li>\n<li style=\"text-align: justify;\">Press enough dough into the moulds to form the piglets.<\/li>\n<li style=\"text-align: justify;\">Dislodge by hitting the moulds gently on a hard surface.<\/li>\n<li style=\"text-align: justify;\">Place 1cm apart on greased baking tray.<\/li>\n<li style=\"text-align: justify;\">Gently press 2 red beans into each dough to form the eyes.<\/li>\n<li style=\"text-align: justify;\">Bake for 12 min. Remove and leave to cool for 10 min.<\/li>\n<li style=\"text-align: justify;\">Brush pig <strong><\/strong>with glaze.
