He believed that doing so would create a version of ice-cream that is much softer and lighter in texture. He did achieve the desired outcome, but this outcome must come with an additional amount of effort put into making the ice-cream base first.<\/p>\n<p style=\"text-align: justify;\">Try it and have fun at the same time you do so. Happy Halloween!<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p><em><strong>Ingredients<\/strong><strong>:<\/strong><\/em><\/p>\n<ul>\n<li style=\"text-align: justify;\">Double\/heavy cream: 600ml<\/li>\n<li style=\"text-align: justify;\">Low-fat milk: 300ml<\/li>\n<li style=\"text-align: justify;\">Caster sugar: 120g<\/li>\n<li style=\"text-align: justify;\">Vanilla seeds: of 2 pods, deseeded with a knife<\/li>\n<li style=\"text-align: justify;\">Large egg yolk: 6<\/li>\n<li style=\"text-align: justify;\">Mango: 4, medium-sized, pureed briefly or mashed with a fork<\/li>\n<\/ul>\n<p><strong><em>Method<\/em><\/strong>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Heat up cream, milk, sugar and vanilla seeds in a pot on low heat.<\/li>\n<li style=\"text-align: justify;\">Turn heat off once the mixture starts to simmer. Set aside.<\/li>\n<li style=\"text-align: justify;\">Whisk egg yolks together for 3 min. Slowly add boiled mixture into beaten yolks while whisking so that the yolks do not get cooked.<\/li>\n<li style=\"text-align: justify;\">Pour the whisked mixture back into the pot. Cook on low heat till it starts to thicken.<\/li>\n<li style=\"text-align: justify;\">Leave to cool and then refrigerate overnight.<\/li>\n<li style=\"text-align: justify;\">Pour refrigerated mixture and mango puree into an ice-cream maker and leave to set for 1 hr till the mixture starts to freeze.<\/li>\n<li style=\"text-align: justify;\">Leave mixture to set for 1 hr in the freezer before serving.<\/li>\n<\/ol>\n<p style=\"text-align: center;\"><a href=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2013\/10\/Mango-Ice-Cream-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-5847 aligncenter\" alt=\"Mango Ice-Cream 1\" src=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2013\/10\/Mango-Ice-Cream-1.jpg\" width=\"500\" height=\"569\" \/><\/a><\/p>\n<p><em><strong>Tricks<\/strong><\/em>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">If the ice-cream does not set in the ice-cream maker (just like ours), simply leave the mixture to set for 1 hr in the freezer first before serving. This will add more bite to the texture.<\/li>\n<\/ul>\n<p><em><strong>Disclaimer:<\/strong><\/em><\/p>\n<ul>\n<li style=\"text-align: justify;\">Taking pictures of ice-creams in tropical Singapore is a real challenge. I was rushing to get everything done before the ice-cream started melting.
