When it comes to dried egg noodles, one of the best ways to cook them is to stir-fry the blanched noodles with vegetables and really, really good quality dark soy sauce, this being the most important factor that determines the tastefulness of the noodle dish.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\"><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">Dried egg noodles: 5 slices (375g)<\/li>\n<li style=\"text-align: justify;\">Oil: 5 tbsp<\/li>\n<li style=\"text-align: justify;\">Green chilli padi: 5, sliced finely<\/li>\n<li style=\"text-align: justify;\">Bean sprouts: 300g<\/li>\n<li style=\"text-align: justify;\">Light soy sauce: 5 tbsp<\/li>\n<li style=\"text-align: justify;\">Dark soya sauce: 3 tbsp<\/li>\n<li style=\"text-align: justify;\">Oyster sauce: 2 tbsp<\/li>\n<li style=\"text-align: justify;\">Sugar: 1 tsp<\/li>\n<li style=\"text-align: justify;\">White pepper: to taste<\/li>\n<li style=\"text-align: justify;\">Chinese chives: 1 stalk, sliced into finger lengths<\/li>\n<li style=\"text-align: justify;\">Sesame seeds (optional): 2 tbsp<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><em><strong>Method<\/strong><\/em>:<\/p>\n<ol>\n<li style=\"text-align: justify;\">Blanch noodles quickly in boiling water to soften. Drain and set aside.<\/li>\n<li style=\"text-align: justify;\">Heat oil in wok. Stir-fry chilli till fragrant.<\/li>\n<li style=\"text-align: justify;\">Add bean sprouts and leave to cook for 1 min. Mix in noodles.<\/li>\n<li style=\"text-align: justify;\">Add in the rest of the sauces, sugar and pepper. Stir to mix evenly.<\/li>\n<li style=\"text-align: justify;\">Add in chives and stir quickly to mix.<\/li>\n<li style=\"text-align: justify;\">Sprinkle with sesame seeds to garnish.
