Kimchi jjigae (\uae40\uce58 \ucc0c\uac1c) is hence a stew comprising mainly kimchi as well as other ingredients like beancurd, meat and mushrooms. Given that kimchi is a type of pickled vegetable that opens up one&#8217;s appetite, this stew is therefore easy to digest, what with its accompanying ingredients and soup base that are mostly mild and light tasting as well.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\"><em><strong>Ingredients<\/strong><\/em>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">Pork belly: 300g, sliced thinly<\/li>\n<li style=\"text-align: justify;\">Sesame oil: 2 tbsp<\/li>\n<li style=\"text-align: justify;\">White onion: 1, finely chopped<\/li>\n<li style=\"text-align: justify;\">Fermented kimchi: 1 kg, sliced<\/li>\n<li style=\"text-align: justify;\">Kimchi sauce (from packet): 1\/2 cup<\/li>\n<li style=\"text-align: justify;\">Water: 3 cups<\/li>\n<li style=\"text-align: justify;\">\uace0\ucd94\uc7a5 (gochujang, hot red pepper paste): 3 tbsp (optional)<\/li>\n<li style=\"text-align: justify;\">Sugar: 2 tbsp<\/li>\n<li style=\"text-align: justify;\">Salt: 2 tsp<\/li>\n<li style=\"text-align: justify;\">Semi-firm tofu: 1 pack, cubed<\/li>\n<li style=\"text-align: justify;\">Green onion (or spring onion): 1 stalk, chopped<\/li>\n<li style=\"text-align: justify;\">Enoki mushroom: 1\/2 pack, roots sliced off<\/li>\n<\/ul>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<ol>\n<li style=\"text-align: justify;\">Add pork belly and sesame oil to wok. Stir-fry till golden brown.<\/li>\n<li style=\"text-align: justify;\">Add onion, kimchi, kimchi sauce, water and gochujang to pork belly.<\/li>\n<li style=\"text-align: justify;\">Bring to boil and then simmer for 15 min.<\/li>\n<li style=\"text-align: justify;\">Add sugar, salt, then tofu and green onions.<\/li>\n<li style=\"text-align: justify;\">Stir gently to mix to prevent tofu from breaking apart.<\/li>\n<li style=\"text-align: justify;\">Stir in enoki mushrooms just before switching off the heat.<\/li>\n<li style=\"text-align: justify;\">Serve with rice or ramen noodles.<\/li>\n<\/ol>\n<p style=\"text-align: center;\"><a href=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2014\/06\/Kimchi-Jjigae-3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-7562 aligncenter\" alt=\"Kimchi Jjigae 3\" src=\"https:\/\/peepor.net\/pint\/blog\/wp-content\/uploads\/2014\/06\/Kimchi-Jjigae-3.jpg\" width=\"500\" height=\"716\" \/><\/a><\/p>\n<p style=\"text-align: justify;\"><em><strong>Tricks<\/strong><\/em>:<\/p>\n<ul>\n<li style=\"text-align: justify;\">To get a stronger kimchi flavour in the soup base, use only ripely fermented kimchi (which are also more expensive!)<\/li>\n<li style=\"text-align: justify;\">The remaining ingredients including enoki mushrooms, onions, pork belly and tofu can be added according to personal preferences.
