This is the third, and probably last, salmon dish that I am going to do this week. I will have to really think hard about what I want to do with the precious last piece!<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\"><strong><em>Ingredients<\/em><\/strong>:<\/p>\n<ul style=\"text-align: justify;\">\n<li>Rice: 3\/4 cup<\/li>\n<li>Water: 1.5 cups<\/li>\n<li>Olive oil: 4 tbsp<\/li>\n<li>Salmon fillet: 1 piece, deboned, rubbed with salt<\/li>\n<li>Fresh chilli: 1, chopped<\/li>\n<li>Chilli powder: 2 tbsp<\/li>\n<li>Basil: leaves from 1 stalk, finely chopped<\/li>\n<li>Chinese Parsley: 1 stalk, finely chopped<\/li>\n<li>Anchovy preserved in olive oil: 2 tsp<\/li>\n<li>Defrosted prawn: 4 pieces, defrosted<\/li>\n<li>Salt: to taste<\/li>\n<li>Ground blackpepper: to taste<\/li>\n<li>Lemon: 1 slice<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong><em>Method<\/em><\/strong>:<\/p>\n<ol style=\"text-align: justify;\">\n<li>Cook rice in water for 20min in a microwave. Cool and set aside.<\/li>\n<li>Heat 2 tbsp oil. Fry salmon 3min on each side till brown and crisp.<\/li>\n<li>Leave salmon to cool and flake it.<\/li>\n<li>Heat remaining oil and add chilli, chilli powder, basil and parsley. Fry 1min.<\/li>\n<li>Stir in rice, anchovy, salmon and prawns. Stir fry 1min.<\/li>\n<li>Add salt and blackpepper.
