It was at the Priv\u00e9 caf\u00e9. I ordered a grilled salmon served with couscous. I remember the taste very vividly &#8211; fresh, crunchy, citrus, light and a little lemony sour. The salad went really well with the salmon, neutralising and ridding it of its possibly fishy and oily tastes.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">I must say that I loved the bursting flavours of this salad and have been thinking about it a lot ever since then. I believe it should not be too complicated a dish to handle, given that couscous fluffs up amazingly fast which helps to complement a quick meal. The rest of the salad, really, is about getting the freshest produce from the market and throwing them all together with the couscous.<\/p>\n<p style=\"text-align: justify;\"><em><strong>Ingredients (Couscous Salad):<\/strong><\/em><\/p>\n<ul>\n<li style=\"text-align: justify;\">Chicken stock: 2 cups<\/li>\n<li style=\"text-align: justify;\">Couscous: 280g<\/li>\n<li style=\"text-align: justify;\">Balsamic vinegar: 2 tbsp<\/li>\n<li style=\"text-align: justify;\">Lemon juice: 1\/2 lemon<\/li>\n<li style=\"text-align: justify;\">Extra virgin olive oil: 2 tbsp<\/li>\n<li style=\"text-align: justify;\">Cucumber: 1, core removed, diced<\/li>\n<li style=\"text-align: justify;\">Roma tomato: 3, diced<\/li>\n<li style=\"text-align: justify;\">Basil leaf (or mint leaf): 12, finely chopped<\/li>\n<li style=\"text-align: justify;\">Feta cheese: 100g, mashed with fingers<\/li>\n<\/ul>\n<p><em><strong>Ingredients (Salmon):<\/strong><\/em><\/p>\n<ul>\n<li style=\"text-align: justify;\">Olive oil: 2 tbsp<\/li>\n<li style=\"text-align: justify;\">Salmon fillets (with skin): 2 fillets<\/li>\n<li style=\"text-align: justify;\">Salt: 1 tsp<\/li>\n<li style=\"text-align: justify;\">Ground blackpepper: 1 tsp<\/li>\n<li style=\"text-align: justify;\">Lemon juice: 1\/3 lemon<\/li>\n<\/ul>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<ol>\n<li style=\"text-align: justify;\">Boil stock. Add to couscous and let stand for 5 min. Fluff with fork and set aside to cool.<\/li>\n<li style=\"text-align: justify;\">Stir in balsamic vinegar, lemon juice and extra virgin olive oil.<\/li>\n<li style=\"text-align: justify;\">Mix in cucumber, tomatoes and basil leaves.<\/li>\n<li style=\"text-align: justify;\">Top with feta cheese to serve.<\/li>\n<li style=\"text-align: justify;\">In the meantime, heat shallow pan with olive oil.<\/li>\n<li style=\"text-align: justify;\">Rub both sides of salmon fillets with salt, blackpepper and lemon juice.<\/li>\n<li style=\"text-align: justify;\">Place fillets into pan.
