A financier has French origin, a cake baked with ground almond, eggs and icing sugar and that takes the shape of a rectangular gold bar. I love how this cake comes with fruit toppings, because it makes them really palatable, attractive and irresistible for both the young and old.
I decided to give this a first try using a very simple, basic recipe that is easy to put together in under fifteen minutes. Using strawberries to top off the cake makes it a perfect gift for one and all to have because it makes the cakes look so heartwarming and lovely, cakes that are baked from the bottom of my heart.
Ingredients:
- Unsalted butter: 60g
- Icing sugar: 55g
- Cake flour: 55g
- Ground almond: 40g
- Egg white: 4 large eggs (80g)
- Strawberry: 3, halved
- Pistachio: a handful, crushed
Method:
- Heat butter in a saucepan.
- Bring to boil, and leave to bubble on low heat till slightly browned and bubbling stops. Remove from heat, strain and leave to cool.
- Preheat oven at 180 degrees Celsius.
- Butter and flour baking mould.
- Combine icing sugar, cake flour and ground almond.
- Lightly whisk together egg whites till liquid but not foamy.
- Stir egg whites into flour mixture, followed by browned butter.
- Pour mixture into baking mould. Top with strawberry halves and pistachios.
- Bake 15min till browning starts at the edges.
- Rest 10min before removing from mould.

- I could not find baking moulds that resemble a financier anywhere here in Singapore, hence I decided to stick to my regular round muffin trays for these ‘financiers’, which in turn gave me less than the usual 6 medium-sized cakes.
