We are headed into May soon – tomorrow! I love the beginning of May because the first day of May is always a holiday. And then because I came into being after Labour Day (literally), it gives me one more good reason to take a breather and to do the things I like. I am forty-five years old this year by the way, and I hope that I can continue to live simply, sufficiently and be a useful human being for another twenty years or so, minimally.
Here’s a simple recipe using potatoes and flour to make simple pancakes. You can serve it and garnish it with whatever you like and eat it whenever you like (breakfast, lunch or dinner). The pancakes are plain, so you will need to eat them with a little something that’s ideally savoury, but not too heavy.

Ingredients:
- Potato: 115g, peeled
- Plain flour: 175g
- Instant dried yeast: 1 tbsp
- Lukewarm water: 300ml
- Salt: a pinch + extra to serve
- Olive oil: for pan-frying
- Ground blackpepper: for serving
- Smoked salmon: for serving
- Sour cream: for serving
- Lemon: 1, cut into wedges
Method:
- Boil potatoes till soft. Mash and set aside to let cool.
- Combine plain flour, instant dry yeast, mashed potatoes, water and a pinch of salt.
- Stir till evenly mixed. Leave to rise in warm place for 30min.
- Heat oil in pan. Drop tablespoons of batter onto pan. Cook 2min.
- Flip to the other side. Cook 1min till golden brown and slightly crisp.
- Season with salt and blackpepper.
- Serve warm with smoked salmon, sour cream, and lemon.
