Corn – this has to be one of my favourite flavours for snacks, be it for ice-cream, mochi, candies or any other desserts. This ice-cream tastes absolutely heavenly, a flavour that’s both flirty and uniquely Asian.
Ingredients:
- Skimmed milk: 180ml (3/4 cup)
- Large eggs: 2
- Castor sugar: 1/4 cup
- Fresh whipping cream: 375ml (1 1/2 cup)
- Vanilla essence: 1 tsp
- Sweet corns: 1/2 cup
Method:
- Whisk milk for 2min and cool for 30min in the fridge.
- Whisk eggs till light and fluffy.
- Add sugar and whisk for 2min till consistent.
- Add cream and vanilla essence into mixture. Whisk for another 2min.
- Chill the mixture for 1 hr.
- Remove from fridge and whisk for 3-4min. Then leave to set in freezer for 1hr.
- Thereafter, remove mixture from freezer after every 1 hr and whisk (or stir) gently with a fork. Repeat this step for 3-4 times.
- Add in the sweet corns when the mixture is thick enough to prevent the corns from sinking.
- Finally, leave the mixture to set in the freezer overnight.
Zesty lemon – A perfect combination of lemon curd, orange pulps and zest. Refreshing and sensational – a great flavour to have on Valentine’s Day!
Ingredients:
- Skimmed milk: 180ml (3/4 cup)
- Lemon curd: 1/4 cup
- Fresh whipping cream: 375ml (1 1/2 cup)
- Large eggs: 2
- Vanilla essence: 1 tsp
- Orange pulp: of 1 orange
- Zest: of 1 orange
Method:
- Same as above, except that you whisk milk with lemon curd in Step 1 and add in pulps and zest instead of corns in Step 8.
Serving:
2 pints each
