Stuffed Tofu In Black Bean Sauce

It is still raining almost everyday. This week, I only got to cycle once (or twice?), but I managed to jog back home once as well. I used to try to jog home from work before I had a child too, once in a while, but that stopped after I had the boy because of the logistical arrangements to pick him up after school. Now that he’s much older, and in a student care nearer the house, I gave it a try again. It was tiring! But I was happy to have accomplished something that I haven’t done for the longest time in the new year. 🙂

This recipe is an alternative version of stuffed tofu. I love tofu dishes because they are light, soft, and goes well with chilli. So I love all sorts of dishes with tofu including yong tau foo, mapo tofu and so on.

I much prefer the other version of Stuffed Tofu With Gravy that I did three and a half years ago. That one had a lighter sauce cooked with egg white. This sauce is saltier, and includes black beans, so it’s great for those of us who love black beans. If you are not a fan of it, not to worry, you can actually go without it to create a similar, lighter sauce as well. In any case, you don’t have to eat the black beans (I don’t). Just leave them aside and discard them after you are done with the tofu.

Ingredients:

  • Oil: 2 tbsp + 2 tbsp + 2 tbsp
  • Firm tofu: 2 small, quartered
  • Minced pork: 80g
  • Fish paste: 80g
  • Garlic: 1, finely chopped
  • Spring onion: 1 stalk, finely chopped
  • Salt: 1/4 tsp
  • Ground blackpepper: 1/4 tsp
  • Ginger: 1.5 tbsp, minced
  • Fermented black bean: 2 tbsp
  • Oyster sauce: 2 tbsp
  • Light soy sauce: 1.5 tbsp
  • Sesame oil: 1 tsp
  • Water: 1 cup
  • Cornstarch mixture: 1.5 tsp cornstarch + 1.5 tsp water

Method:

  1. Heat 2 tbsp oil in pan. Pan-fry tofu 1min on each side till lightly browned. Remove from heat and set aside.
  2. Combine minced pork, fish paste, 1/2 of garlic, 1/2 of spring onion, salt and blackpepper.
  3. Scoop out a tsp of tofu on each quartered tofu. Stuff mixture into slit. Repeat for all tofu.
  4. Heat 2 tbsp oil in pan. Pan-fry tofu meat side down till meat is browned. Remove from heat and set aside.
  5. Wipe oil away. Add 2 tbsp oil in pan. Fry ginger till fragrant.
  6. Add remaining 1/2 of garlic, spring onion & fermented black beans. Cook 1min.
  7. Add oyster sauce, light soy sauce, sesame oil and water. Leave to simmer.
  8. Gradually stir in cornstarch mixture. Stir to combine.
  9. Place tofu into gravy. Cook 3-4min till tofu is soft, flipping once.
  10. Garnish with spring onion to serve.

Trick:

  • The next time I try out this recipe again, I will scoop out more of the tofu so that I can stuff more meat mixture into it. Am wondering how it will look if the meat is totally flat and within the concave of the tofu itself…
