Potato Bravas

This dish and recipe is for those who really love their potatoes. It’s very carbo-dense, so if this is too much for you, do consider serving it as a side instead with something lighter (salad bowl, fruits, runny egg, or some roast meat). Also, make sure to prepare a lot more of the sauce as this is the key thing to making potato bravas a tasty dish.

Ingredients:

  • Potato: 1kg, cut into 3cm pieces
  • Olive oil: 1/4 cup + 1 tbsp
  • Salt: 1/4 tsp + extra to taste
  • White onion: 1 small, finely chopped
  • Garlic: 1 clove, crushed
  • Chilli flake: 1/2 tsp
  • Ground cumin: 1/2 tsp
  • Paprika: 1 tsp
  • White wine: 1/4 cup
  • Tomato: 2, finely chopped
  • Tomato paste: 1 tbsp
  • Parsley: 1 stalk, chopped

Method:

  1. Preheat oven at 210 degrees Celsius.
  2. Coat potatoes in 1/4 cup olive oil and 1/4 tsp salt. Bake for 40min, turning over once.
  3. Scoop equal portions into 6 serving bowls. Set aside.
  4. Heat 1 tbsp olive oil in pan. Cook onions for 3min till softened.
  5. Add garlic, chilli flakes, ground cumin & paprika.
  6. Add white wine and simmer for 30 seconds. Reduce to medium heat.
  7. Add tomatoes & tomato paste. Cook 10min till thickened. Remove and leave to cool.
  8. Blend sauce till smooth. Add salt to taste.
  9. Pour sauce over baked potatoes.
  10. Garnish with parsley to serve.

Disclaimer:

  • I did not add in chilli flakes and paprika as my boy is unable to take food that is too spicy. This is why the sauce does not look as red as it should be.

Serving:
4 to 6 persons as side dish
