This weekend is preparation week for the upcoming F1 race. I’ve signed myself up for a voluntary role this year, at the Singapore Grand Prix, and I’ve been assigned as a flag marshal (or what they call flaggie for short). It’s really exciting because it’s something I’d never thought I’ll ever do in my life, and now I’m doing it at 44 years old. Crazy, but YOLO. It’s going to be tiring, but I’m looking forward to the experience. So far so good.
So this weekend and the next will be tiring. But I still love cooking, and I’ve got here a recipe of chicken patty burger which is really simple to do. If you want to tone it down even further, you can just eat the patty as it is, without the burger bun. And it’s still nice and juicy and delicious with the mayonnaise. Remember to eat it with some lettuce or salad to get rid of the grease (not that it’s very greasy to start with though).
I also have a cheeseburger recipe that uses a German pork patty recipe and that remains my favourite of all time. Do give that a try too, if you’ve got time. One burger a week.
Ingredients:
- Oil: 5 tbsp
- Garlic: 4 cloves, sliced
- White onion: 1, sliced
- Red chilli: 2, deseeded & sliced
- Minced chicken: 600g
- Lemon juice: 2 tsp
- Lemon zest: 1 tsp
- Salt: 1.5 tsp
- Ground blackpepper: 1 tsp
- Plain flour: about ½ small bowl + extra for dusting hands
- Butter: 2 tbsp
- Burger bun: 3, sliced into halves
- Gouda cheese: 3 slices
- Lettuce: a handful
- Tomato: 2, sliced thinly
- Mayonnaise: a few tbsp
Method:
- Heat oil in pan. Fry garlic, onion & chilli till evenly browned. Let cool.
- Blend fried mixture till a smooth paste forms.
- Combine minced chicken with lemon juice, lemon zest, salt, blackpepper & blended mixture.
- Using floured hands, form minced mixture into 10 round patties. Coat patties with plain flour. Set aside.
- Heat pan with 1 tbsp butter. Toast burger buns till lightly browned. Set on serving plate.
- Heat pan with 1 tbsp butter. Place patties into pan. Cook 4-5min on medium heat.
- Flip to cook the other side till lightly browned (4-5min).
- To assemble, place one slice of Gouda cheese on top of warm base bun, followed by lettuce, chicken patty, tomato slices and the top bun. Squeeze some mayonnaise onto the patty.
- Serve hot.
