Baking A Golden Tart With Tomato, Ham & Brie

This is a simple French style tomato & brie tart that’s simple to make and delicious. The golden colour of the tart can never fail to appeal to anyone who’s in for a treat. The bright red and yellow colours of the tomatoes add to the fiesta of colours in this tart – it’s simply irresistible!

You can decide to choose another type of cheese (mozzarella balls, Camembert) that’s not too strong or overpowering. And you can choose other vegetables over tomatoes (spinach, bell peppers, rocket leaves) so its highly customisable according to your taste buds. The crust is crumbly and buttery but not greasy at all.

You can also keep some in the fridge for a day or two and serve them by microwaving for a minute or two. 

Ingredients:

  • Plain flour: 250g
  • Salt: ½ tsp
  • Unsalted butter: 180g (1 cup)
  • Water: 3 tbsp
  • Egg: 3
  • Milk: 300ml
  • Mixed herbs: 2 tsp
  • Salt: ¾ tsp
  • Ground blackpepper: 1 tsp
  • Roma /cherry tomato: 10, halved
  • Brie / Camembert: 75g, sliced
  • Picnic ham: 4 slices, diced

Method:

  1. Preheat oven at 190 degrees Celsius.
  2. Combine plain flour with salt. Rub butter into flour mixture to form breadcrumbs.
  3. If need, mix in water to form a firm dough.
  4. Roll out thinly between floured baking papers.
  5. Blind bake for 15min. Remove beans and bake another 5min.
  6. Separately beat eggs with milk, herbs, salt & blackpepper. Set aside.
  7. Top tart base with tomatoes, brie & ham.
  8. Pour egg mixture over toppings.
  9. Bake 40min at same temperature till golden brown and firm.
  10. Cut into slices to serve.

  • I changed out the black olives for picnic ham as the boy doesn’t really eat olives yet.
