Easy Herby Potato Mash

September school holidays is over. The boy and I had a great time going for outings in Singapore. It’s amazing how many things there are to do in Singapore alone, so there’s no real need to travel overseas at all. Plus, it didn’t rain much at all throughout the week. The rain kind of held out until a rainpour finally happened on Friday and Saturday. Otherwise, it was bright and sunny all week long. Nice! 

And we went falcon hunting in the mornings, on Thursday and Friday. It was crazy – mildly crazy, because it wasn’t something I had thought I would do at all, for a falcon. But we did, and we all went along together. Guess what? The falcon decided it didn’t want to eat any pigeons at Jln Kukoh though, so we went home disappointed on both days. It’s okay falcon, we respect your privacy. 

So today, to mark the end of a short yet fruitful holiday, it’s a simple recipe of mash potato to celebrate the simplicities in life. It’s a slightly more herby version, just to give infuse some texture and taste in it. Crazy things can be simple to do, and as long as we went along without any big expectations, life will go by quietly but happily. 

Ingredients:

  • Potato: 2, peeled, sliced into chunks
  • Butter: 1 tbsp
  • Milk: 1 tbsp
  • Coriander: 2 tbsp, finely chopped
  • Chive: 2 tbsp, finely chopped
  • Salt: to taste
  • Ground blackpepper: to taste

Method:

  1. Boil potatoes in a pot of water for 15min till soft. Drain away water and return pot to stove to heat up all the liquid.
  2. Mash with butter and milk. Stir in coriander, chives, salt and blackpepper.
  3. Serve warm as a side dish.

Disclaimers:

  • This mash tastes good as it is, so there’s no need to prepare any gravy to go along with it unless you prefer to have some. 
  • This recipe is really not much different from the mash potato that I did before, though this recipe included more herbs than the previous one fifteen years ago and has no cheese in it.

Serving:
2 – 3 persons as side dish
