First dish of 2025. Another simple dish to make, and one that I will probably make again soon. Three key ingredients – clams, miso paste, water. Bang.
On a day when I want to go fuss-free, I will just cook a small pot of this to go with plain rice. The soup, as tasty as they are, is enough to fill up my stomach and warm my soul. It’s filled with the taste of the sea and its savoury miso flavour makes it so addictive.
I really don’t need anything else. Maybe just a little bit of peace and quiet, that will be best.
Ingredients:
- Water: 500ml
- Dried kelp (kombu): 1 piece
- Clam: 200g, washed
- Miso paste: 1 tbsp
- Sake: 1 tbsp
- Mirin: 2 tbsp
- Spring onion: 1 stalk, finely chopped
Method:
- Boil water with kelp. Remove kelp from broth and discard.
- Add clams to broth and boil till they open. Reduce to a simmer.
- Stir in miso paste, sake and mirin.
- Garnish with spring onion to serve.
